Recipe for Saharan mustard greens.

Saharan/Asian mustard

stuff

  • 1 tsp sesame oil
  • soy sauce/tempura sauce. not too much otherwise it will over power.
  • 1 tbsp butter
  • 1/2 tbsp honey
  • one handful of greens
  • cover leaves with water. We will reduce this so not too much.

cook

  • place ingredients in wok or stirfry pan with lid
  • cover and use medium heat. Cook for 20 ish minutes.
  • check to see how firm the stems are you want them fairly soft.
  • increase heat. Cook uncovered until you have a light watery sauce. don't reduce too much or the honey and soy will over power everything
  • turn off heat and serve.

notes

The hairy ones just need to be cooked longer.

The leaves near the ground have harmless white hairs that are not a good texture. These leafs are stiffer and thicker so they need to be cooked longer anyway.

other attempts

salt+pepper+garlic+a dab of bacon grease was a fail. The pepper enhanced the bitter and it was confusing.
