For Debian just change the name of the branch:

apt-get update

For Centos5 the repo is located at copr.fedoraproject.org/coprs/saltstack/salt-el5/ so a one-liner for have a minion installed:
cd /etc/yum.repos.d/; wget http://copr.fedoraproject.org/coprs/saltstack/salt-el5/repo/epel-5/saltstack-salt-el5-epel-5.repo; yum makecache; yum -y install salt-minion
