How to make awesome guacamole

Ingredients: | |
- 4 large ripe soft avocados | |
- 12 cherry tomatoes | |
- small red onion | |
- whole lemon | |
- cilantro | |
Prepare a large serving bowl. | |
Cut each avocado in half. | |
Remove all but one pit - keep one pit to store in the guacamole to keep it from turning brown. | |
Use a butter knife to cut the avocado halves in a grid pattern with approximately 0.5cm^2 chunks. | |
Make more butter knife cuts diagonally to slice the avocado grid vertically, rotating the avocado in your hand as you do this. | |
Squeeze each avocado into the mixing bowl, stirring and homogenizing with the butter knife as you go. | |
Prepare the onion, cilantro, lemon, and tomatoes. | |
Slice the onion very thinly. | |
Slice the tomatoes thinly and gently squeeze excess water from the tomatoes. | |
Cut the lemon into 4 pieces. | |
Tear up the cilantro into small strips. | |
Gradually add each ingredient in turn. Never add all of one ingredient without tasting - you can always add more but you can't remove some. Squeeze 1/4 of the lemon over the guacamole. | |
Stir thoroughly until all ingredients are evenly distributed. | |
Taste the guacamole. Continue adding ingredients to taste. | |
Consider adding salt, but only if the chips you'll use are unsalted. | |
