Chicken of the woods and chard soup. It takes about an hour to make, and is better the next day.
- 1 bunch of chard, stems removed, and the leaves ripped into smaller pieces
- 1 bunch of chicken of the woods/maitake mushrooms, ripped into smaller chunks. ~1/4 lb.
- 1 yellow onion, chopped
- 6 cloves of garlic, chopped fine
- 1/4 cup of olive oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 8 cups of water
- 1 tablespoon of bouillon. I like Better than Bouillon.
- put the olive oil in a stock pot on medium to medium-low heat
- fry the onion for ~5 mins
- add in the mushrooms and garlic and salt and pepper, fry for another few minutes
- add in the chard, fry for a minute or so. Wait for it to cook down a little.
- dump in the water
- once the water warm, stir in the tablespoon of bouillon
- let it cook for at 40-50 mins, but try not to let the soup boil
- spoons out
I'm going to start saying spoons out every time I eat soup.
