Chicken of the woods and chard soup

Chicken of the woods and chard soup. It takes about an hour to make, and is better the next day.

ingredients

  • 1 bunch of chard, stems removed, and the leaves ripped into smaller pieces
  • 1 bunch of chicken of the woods/maitake mushrooms, ripped into smaller chunks. ~1/4 lb.
  • 1 yellow onion, chopped
  • 6 cloves of garlic, chopped fine
  • 1/4 cup of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 8 cups of water
  • 1 tablespoon of bouillon. I like Better than Bouillon.

do it

  1. put the olive oil in a stock pot on medium to medium-low heat
  2. fry the onion for ~5 mins
  3. add in the mushrooms and garlic and salt and pepper, fry for another few minutes
  4. add in the chard, fry for a minute or so. Wait for it to cook down a little.
  5. dump in the water
  6. once the water warm, stir in the tablespoon of bouillon
  7. let it cook for at 40-50 mins, but try not to let the soup boil
  8. spoons out
