(No sugar added) Strawberry Almond cake

Ingredients

  • 3 eggs
  • 2/3 cup of apple sauce
  • 2 cups of flour
  • 1 cup of almond flour
  • 1/3 cup of milk (coul be almond, soy, oats, etc.)
  • 2 tsp of baking powder
  • 1 tsp of baking soda
  • 1 pich of salt
  • 1 tbsp of coconut oil
  • 1 1/2 cup of frozen strawberries
  • Sliced almond

Instructions

  • Preheat the oven at 350 F.
  • In a large bowl, beat the eggs.
  • Add the apple sauce and the extract.
  • Add the two kinds of flour, and a pinch of salt.
  • Add the milk
  • Add the baking powder and the baking soda, followed by the coconut oil.
  • Coat an 8-in or 10-in cake pan with coconut oil and spread a thin layer of flour on top. Make sure to cover the sides, too. This will make is easy to take the cake out of the pan.
  • Pour half of the batter in the pan and add a layer of whole frozen strawberries.
  • Pour the other half and sprinkle a handful of sliced almonds.
  • Put the cake in the over for ~45 min. The usual: brown and knife comes out dry.
  • Take the cake out of the oven and let is cool on a rack.
