- 3 eggs
- 2/3 cup of apple sauce
- 2 cups of flour
- 1 cup of almond flour
- 1/3 cup of milk (coul be almond, soy, oats, etc.)
- 2 tsp of baking powder
- 1 tsp of baking soda
- 1 pich of salt
- 1 tbsp of coconut oil
- 1 1/2 cup of frozen strawberries
- Sliced almond
- Preheat the oven at 350 F.
- In a large bowl, beat the eggs.
- Add the apple sauce and the extract.
- Add the two kinds of flour, and a pinch of salt.
- Add the milk
- Add the baking powder and the baking soda, followed by the coconut oil.
- Coat an 8-in or 10-in cake pan with coconut oil and spread a thin layer of flour on top. Make sure to cover the sides, too. This will make is easy to take the cake out of the pan.
- Pour half of the batter in the pan and add a layer of whole frozen strawberries.
- Pour the other half and sprinkle a handful of sliced almonds.
- Put the cake in the over for ~45 min. The usual: brown and knife comes out dry.
- Take the cake out of the oven and let is cool on a rack.
