I told ChatGPT what was in my fridge, and it made me this recipe for an *excellent* pasta bake.
### Ingredients:
- 350g pasta (penne, fusilli, or rigatoni work well)
- 2 tablespoons olive oil
- 1 large red bell pepper, diced
- 1 large green bell pepper, diced
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- Salt and freshly ground black pepper, to taste
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 2 tablespoons plain flour
- 150g crème fraîche
- 300ml vegetable stock
- Fresh parsley or basil, for garnish
### Instructions:
1. **Preheat the Oven:** Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
2. **Cook the Pasta:** In a large pot of boiling salted water, cook the pasta until al dente according to package instructions. Drain and set aside.
3. **Sauté the Vegetables:** Heat the olive oil in a large skillet over medium heat. Add the red and green bell peppers, onion, and garlic. Season with salt, pepper, Italian seasoning, and red pepper flakes if using. Cook until the vegetables are softened, about 5-7 minutes.
4. **Create the Sauce:** Sprinkle the flour over the vegetables, stirring to coat them evenly. Cook for 1 minute. Gradually whisk in the milk or crème fraîche, ensuring there are no lumps. Add the vegetable broth and bring the mixture to a simmer. Cook until the sauce thickens, about 5 minutes. Adjust seasoning to taste.
5. **Combine and Bake:** In a large mixing bowl, combine the cooked pasta, sautéed vegetables, and sauce. Transfer the mixture to the prepared baking dish. Bake for 20-25 minutes, until the top is golden and bubbly.
6. **Garnish and Serve:** Let the pasta bake cool slightly before garnishing with fresh parsley or basil. Serve warm.
