- 3 cups green lentils
- 3-4 onions, diced
- 4tbsp cooking oil
- 4tbsp red curry paste
- 2 bay leaves
- garlic, 4-8 cloves, minced or pressed
- ginger, first-segment-of-thumb size, peeled/minced
- 1 can of 'tomato sauce' (tomato puree with garlic/salt/onion preadded) (680ml is normal, more would be ok too)
- 2 cans coconut milk (preferably good stuff, not cheap/rooster brand)
- salt to taste
- rice for serving. either precooked or uncooked to cook alongside
- 4tsp garam masala
- 2tsp curry powder
- 1tsp turmeric
- 2tsp white sugar
- cayenne powder
(go ahead and combine the spices whenever, set aside another ~1tsp turmeric for the lentils)
- start cooking the lentils (2:1 water ratio, 2 bay leaves, stir in a bit of turmeric, bring to boil, reduce to simmer while covered for 15-20min, check doneness towards the end)
- set aside in a strainer, draining off excess water
- once the lentils are going, add the oil and onions to your primary saucepot and cook on medium-low.
- once onions are looking soft and translucent, add the ginger and continue a couple minutes.
- next add garlic and turn the heat up to high
- once garlic is cooking and pan is hot (don't burn garlic!), add the spice mix and red curry paste, stir frequently to prevent burning
- once spices have been activated and mixed thoroughly with the good stuff, pour in the can of tomato sauce. stir it all together and let the tomato sauce cook for 5-10 minutes, until it tastes cooked. you probably want to turn the heat down to medium so it doesn't splatter
- you probably want to start cooking some rice at this point since the lentils should be done by now
- add the coconut milk and cook for another ~5 minutes until the fat is all melted and integrated. if your coconut milk is watery, add another 5 or so minutes for reduction
- last, dump in all the lentils and stir together. cook for another 10-20min depending on how much you want to reduce
- salt to taste, then serve on rice. you can also leave unsalted and salt at serving time. but you gotta salt one way or another
