Fruit + nut stuffing
4 tbsp butter
2 large onion, diced
4 stalks celery, diced
3 cups orange juice
0.5 cups sugar
3 cups cranberries
24 pitted prunes, halved
12 dried apricots, halved
2 cup raisins
6 medium apples, unpeeled and diced
3 cups slivered almonds
4 large eggs, scrambled
2 tsp ground cinnamon
0.5 tsp ground cloves
0.25 tsp ground ginger
Salt and pepper to taste.
1. Melt the butter into a saucepan, then sauté the onions and celery until tender.
2. Once tender, move saucepan contents into a large bowl.
3. Reusing the saucepan, bring OJ and sugar to a boil, then add the cranberries.
4. Simmer until the berry skins begin to pop, then remove from heat and add to bowl.
5. Add the rest of the ingredients to the bowl and stir well.
6. Move to baking dish, cover with tinfoil, and bake at 325F for 70 minutes or so.
7. Remove from oven and let it cool - don't remove the tinfoil or it'll dry out.
8. Serves 20-30.
