Fruit + nut stuffing

4 tbsp butter | |
2 large onion, diced | |
4 stalks celery, diced | |
3 cups orange juice | |
0.5 cups sugar | |
3 cups cranberries | |
24 pitted prunes, halved | |
12 dried apricots, halved | |
2 cup raisins | |
6 medium apples, unpeeled and diced | |
3 cups slivered almonds | |
4 large eggs, scrambled | |
2 tsp ground cinnamon | |
0.5 tsp ground cloves | |
0.25 tsp ground ginger | |
Salt and pepper to taste. | |
1. Melt the butter into a saucepan, then sauté the onions and celery until tender. | |
2. Once tender, move saucepan contents into a large bowl. | |
3. Reusing the saucepan, bring OJ and sugar to a boil, then add the cranberries. | |
4. Simmer until the berry skins begin to pop, then remove from heat and add to bowl. | |
5. Add the rest of the ingredients to the bowl and stir well. | |
6. Move to baking dish, cover with tinfoil, and bake at 325F for 70 minutes or so. | |
7. Remove from oven and let it cool - don't remove the tinfoil or it'll dry out. | |
8. Serves 20-30. |
