Xcode 5.0 からは、Deployment Target に iOS 6.0, 6.1, 7.0 しか選択できません。
iOS 5.x アプリのビルドは(そのままでは)できません。

Xcode 5 による変化

iPad 1 が、Xcode のビルドターゲットから外れました。

iOS 7 による変化

iPod touch 4G, iPhone 3GS は、OSの更新が止まりました。
iPhone 3GS は搭載メモリが256MBしかないため、512MB〜1GBの端末をメインターゲットとする場合は、iPhone 3GS はサポート外としたほうが安全でしょう。

iPhone 3GS と WebAudio API

iOS 6 + MobileSafari で WebAudio API がサポートされましたが、iPhone 3GS で WebAudioAPIを使用すると、メモリ不足のためブラウザが頻繁に落ちます。
WebAudio API を使う場合は、iPhone 3GS をサポート外としたほうが良いでしょう。
