Serves two.
Tuna salad:
- 2 cans (6 oz each) tuna in water (12 oz. drained)
- 1 medium stalk celery
- 1 small red onion
- 1/2 cup mayo
- 1 tspn lemon juice
- 1/2 tspn curry powder
- 1/4 tspn salt
- 1/4 tspn pepper

Sandwich fixings:
- Bread
- Tomato slices
- Lettuce
- Cheddar/pepperjack cheese
- Mayo/mustard

Drain the tuna in a strainer in the sink. Chop the celery to measure 1/2 cup. Peel and chop the onion to measure 1/4 cup. Soak the onions in a bowl of cold water for 5 minutes then drain.

In a medium bowl, mix the tuna, celery, onion, mayonnaise, lemon juice, salt and pepper.

Spread tuna mixture on 2 bread slices. Top with remaining bread slices.
