Tuna Melt

Serves two.

Ingredients

Tuna salad:

  • 2 cans (6 oz each) tuna in water (12 oz. drained)
  • 1 medium stalk celery
  • 1 small red onion
  • 1/2 cup mayo
  • 1 tspn lemon juice
  • 1/2 tspn curry powder
  • 1/4 tspn salt
  • 1/4 tspn pepper

Sandwich fixings:

  • Bread
  • Tomato slices
  • Lettuce
  • Cheddar/pepperjack cheese
  • Mayo/mustard

Preparation

  1. Drain the tuna in a strainer in the sink. Chop the celery to measure 1/2 cup. Peel and chop the onion to measure 1/4 cup. Soak the onions in a bowl of cold water for 5 minutes then drain.

  2. In a medium bowl, mix the tuna, celery, onion, mayonnaise, lemon juice, salt and pepper.

  3. Spread tuna mixture on 2 bread slices. Top with remaining bread slices.
