A fast and easy dish, great for lunch, takes about 10-15 minutes, basically as long as it takes you to boil the water and cook the spaghetti, the rest of the prep can be done while the pasta is cooking.
- 100g fancy mushrooms. I buy these from Sainsburys (makes two servings)
- 4 or 5 regular button mushrooms
- 1 clove garlic
- Salt
- 85g (0.19lb) Spaghetti
- Olive oil
- Parmesan cheese
- Put on a pan of water, salt and bring to a rolling boil.
- Drop the pasta in.
- Chop the mushrooms into bite-size pieces (not too small, they shrink when cooked).
- Heat the oil in a small frying pan, when hot throw in the mushrooms.
- Finely chop or grate the clove of garlic, stir into the mushrooms.
- Salt to taste.
- Stir the mushrooms regularly.
- Drain the pasta when al dente, stir into the mushrooms.
- Serve in a warmed plate or bowl, grate parmesan over to taste.
