This is my customised muffin recipe

Start by watching this video, it has the method for making good simple muffins with some flair.

Raspberry and White Chocolate Muffins | Ainsley Harriott | BBC Studios

I basically use the batter recipe from this so:

  • 300g flour
  • 100g of brown caster sugar
  • 50g of melted butter
  • 2tsp of vanilla
  • 2tsp baking powder
  • 1 cup of milk
  • 1 egg

Then I add some stuff to it:

  • 2 peeled, cored and diced apples, 5mm diced or so typically pink lady
  • 2 tbsp of chia seeds
  • 1 tsp of cinamin
  • 1 punnet of raspberries, typically I buy a few punnets when they are on special and freeze them (added as per below)

I have a muffin tin that takes 1/2 a dozen muffins, normally fill it with the chunky apple batter then distribute the frozen raspberries evenly and just push them into each muffin.
