Start by watching this video, it has the method for making good simple muffins with some flair.

I basically use the batter recipe from this so:
- 300g flour
- 100g of brown caster sugar
- 50g of melted butter
- 2tsp of vanilla
- 2tsp baking powder
- 1 cup of milk
- 1 egg
Then I add some stuff to it:
- 2 peeled, cored and diced apples, 5mm diced or so typically pink lady
- 2 tbsp of chia seeds
- 1 tsp of cinamin
- 1 punnet of raspberries, typically I buy a few punnets when they are on special and freeze them (added as per below)
I have a muffin tin that takes 1/2 a dozen muffins, normally fill it with the chunky apple batter then distribute the frozen raspberries evenly and just push them into each muffin.
