Pulled Pork

Ingredients:

  • 1 bottle "Sweet baby rays" bbq sauce (either of the 2 flavours they have are fine)
  • 1 largish pork shoulder
  • 1 can normal coke
  • 2 brown onion (really badly diced)
  • 2 red apple (pealed and really badly diced)
  • couple cloves garlic (finely chopped)
  • 1 small container Cajun spice
  • 2 or 3 jalapenos (seeds to your love of chillli)

Instructions:

  1. Take off the string cagey thing on the pork
  2. Rub cajun spice in everywhere that isn't covered in fat on the pork shoulder. (in all gaps you can get your hands)
  3. Put everything except pork, bbq sauce, and coke in the slow cooker, and give it a little mix (still don't turn it on)
  4. Take a handful of the mixture you just put in the slow cooker, and put it aside in a bowl for a seconds
  5. Put the pork in the slow cooker - FAT SIDE UP
  6. Put about 3/4 of the bottle of bbq sauce on top of the pork
  7. Pour the can of coke over the top of the pork
  8. Now put the mixture you set aside in the earlier step on top of the pork.
  9. Cook on low for 7.5~8 hours (its cooked when it starts to shred when pulled)
  10. Strain out the liquid into a pot, and leave the pork + everything else in the slow cooker (and turn it off)
  11. Reduce that liquid down in the pot till its pretty thick (mix occassionally)
  12. While the liquid is reducing, grab two forks, and "pull apart" the pork. it will start to shred. shred it all. (If it doesn't start to shred, it isn't cooked yet - put it all back in the slow cooker w/ the liquid)
  13. Mix it all (all includes reduce liquid) back together.
