- 1 Tube of Buttermilk Biscuit dough
- 1 9” pie pan
- 2-3 Peaches
- 2 eggs
- ½ C sugar
- 1 C sour cream
- 1 Tbsp corn starch
- 1 Tsp vanilla
- Sugar and Cinnamon for top
- Preheat the oven to 350
- Press the biscuit dough to the bottom of the pan
- Cover the bottom with the peaches
- In a bowl:
- beat eggs well
- add sugar, sour cream, corn starch and vanilla
- mix well
- Pour the mixture into the crust
- Sprinkle with the sugar and cinnamon
- Bake for about 35 minutes or until lightly brown.
Changes:
- Plain Greek yogurt works just as well if not better than the sour cream
- I used the crust recipe below
- Frozen mixed berries or really any fruit will work.
If you're up for making your own crust this one worked well.
- 4 C flour
- 1 Tsp salt
- ½ C shortening (please use non-hydrogenated for god sake :)
- ½ C sugar
- 1 package yeast
- 3 eggs (beaten)
- 1 C warm milk (divided)
- mix flour, salt, sugar and shortening (a food processor works best)
- dissolve yeast in ½ C warm milk
- add eggs and remaining milk
- form a well in the flour and pour the yeast mix in the middle
- let sit about 10 minutes until the yeast activates
- mix the mixture together until it’s a sticky ball
It is much more manageable if you leave it in the fridge overnight.
