- Dice up some bacon into tiny bits, then fry it until it's nice and crispy.
- Make a white sauce (recipe on Epicurious). Use about 1L of milk.
- Add salt, nutmeg, cayenne, black pepper, white pepper, and whisk it.
- Add handfuls of Gruyere (or another fancy hard cheese) and whisk it.
- Add the bacon and whisk it a little.
- Cook the mac to almost al dente and set it aside. Use 1 packet for 2 people: it'll give you some leftovers.
- Melt some butter (truffle butter if you got it) and mix it into your breadcrumbs. Mix in some Gruyere.
- Put half the mac (we tend to use one packet for two people) into a shallow dish with half the sauce, mix.
- Rest of the shells, rest of the sauce, mix.
- Evenly distribute the breadcrumbs over the top.
- Sprinkle some grated mature Cheddar (or another fancy cheese) over the top.
- Stick it in the oven at 180 C for about 20 mins. It should be browning on the top and bottom.
- Once it's done, add some extra truffle goodness on the top.
