Thanks for sharing such examples!
Would you mind sharing an example with a declarative pipeline that does a sparse checkout of two folders? I just learned you've to explicitly do "checkout scm", but I'm not familiar enough with the declarative syntax to know how to translate the documentation about sparseCheckoutPaths to the declarative syntax.

I currently check out like this: checkout scm. Now I want to do a sparse checkout of two folders: scripts and docker-compose. What checkout step do I get?

I've been having fits trying to do checkouts. I think this is because I'm using multiple slave nodes for the pipeline.
For your sparse checkout, you might consider setting up some svn:externals so that you can just checkout one path, but get the exact pieces that you want.
For me, I wanted a sparse checkout for one of the stages of my pipeline, but I ended up dumping the idea because I found the Custom Workspace (customWorkspace keyword) much more helpful. Once you use that, the checkouts are fast and using a sparse checkout only slows things down.
