떡볶이 (ddeokbokki) recipe from 김한솔

Ingredients

Main

  • 1lb (450g) Rice cakes (1.5in long (thumb length)) (I tried 300g once but there was too much sauce)
  • 0.33lb (150g) fish cakes (4×4in 2.5 layers?—half as much as there is ddeok)
  • 1 onion
  • 1 carrot
  • 1 cup sliced cabbage (optional)

Sauce

  • 2tbsp gochujang
  • 2tbsp gochugaru (coarse? make less hot by reducing to 1tbsp?)
  • 1tbsp soy sauce
  • 1tbsp rice syrup (up to 3tbsp depending on your taste)

Broth

Three options

  • Use 2 cups katsuodashi
  • Make your own broth
    • 2 cups water
    • any combination of the following:
      • radish
      • fish cakes
      • dashima
      • onion
      • dried anchovies
      • etc.
  • 2 cups water (not as good!)

Directions

  1. Start soaking frozen rice cakes in water.
  2. Make broth using one of the following techniques:
    • Make katsuodashi
    • Make your own broth
      1. combine water and other ingredients
      2. boil uncovered (lid traps odors) until the color of the water changes (probably 3 to 5 minutes)
      3. strain out and throw away(?) the used broth ingredients
    • Use plain water
  3. Mix broth and sauce ingredients in a pan
  4. Bring to boil on high heat
  5. Reduce heat to medium
  6. Add main ingredients
  7. Simmer until kind of thick, probably at least half an hour
