3 cups SELF-RISING White Lilly flour

3 Tbsp sugar

1/2 tsp salt

1/2 tsp cream of tartar

3/4 cup COLD or FROZEN salted butter

1 egg

2/3 cup whole milk

1/3 cup whipping cream

For egg wash: 1 egg + 1/4 cup whipping cream, well mixed

Preheat oven to 450

Mix dry ingredients

Grate butter with cheese grater, add to dry mix. Gently fold it in without overworking - aim to keep small pieces intact

Fold in remaining ingredients

Knead on well floured surface, about 12 turns. Final thickness should be about 1 1/2"

Cut with 2-2 1/2 wide floured glass

Brush egg wash on each

Bake 12-15 mins until golden brown
