From Gordon Ramsay's Fast Food
Serves 4, warm or as a cold salad.
- 300g bulgar wheat
- 75g pistachios, toasted
- Large handful chopped mixed fresh herbs (e.g. parsley, mint, basil, chervil)
- Sea salt / black pepper
Dressing:
- 1.5 tbsp pomegranate molasses
- 1.5 tbsp lemon juice
- 6 tbsp extra virgin olive oil
Pour boiling water over wheat in pan to cover, and simmer for 10-12 mins until just tender. Mix dressing separately. Drain bulgar and place in a bowl; while warm, add dressing, nuts and herbs, season with salt and pepper, and mix.
As an alternative to bulgar, you can use couscous. Here's a great method for couscous:
Put 300g regular or wholemeal couscous in a large bowl, and pour on 2 tbsp of olive oil. Make 480ml of instant chicken stock in a jug using freshly boiled water, and pour it over the couscous, but don't mix. Quickly cover the bowl with cling film and leave for 10 minutes -- easy!
