Fajitas

Serves 2

Ingredients

  • 1 large oninon
  • 350-400g of chicken breast chopped into cubes/chunks
  • Fajita seasoning
  • 1/2 tin of refried beans
  • 1 chopped up romaine lettuce
  • 1-2 bell peppers chopped into chunks/squares

Guacamole

  • 2 Avacardo
  • 1 red chilli finely chopped
  • Pasley finely chopped
  • 4 baby tomatoes finely chopped
  • 1/2 of lime juice

Directions

Cook the oinions on a low heat. Marinade chicken in seasoning (even if for a few minutes), then add to the onions until cooked. Once it's cooked, add the pepper, add a light touch of water if it's looking dry. Keep on a low heat.

For the guacamole, mash the ingredients in a bowel using a fork. I tend to start by mashing the avacardo, then adding in the the extra ingredients. Don't blend it, you want it chunky.

Cook the refreid beans (only takes a few minutes to warm up).

To serve: in quarters on your plate, add the lettuse, guac, refried beans and chicken. Eat with knife and fork, and yep, there's no wraps.

Guac omelette

Ingredients

  • 2 Eggs (68g), Large Free Range Eggs
  • 1 egg white, Free Range Egg
  • 1/4 tin of refried beans
  • Pepper

Guacamole

  • 1 Avacardo
  • 1 red chilli finely chopped
  • Pasley finely chopped
  • 2 baby tomatoes finely chopped
  • 1/4 of lime juice

Directions

For the guacamole, mash everything in a bowel using a fork. I tend to make guacamole for Fijitas, so I'll usually use the left overs. It's likely that this will make too much and it might be good for two servings. Try to keep the guacamole at room tempressure (rather than straight out the fridge) as it'll make the omlette cold.

Put the refried beans on low heat.

Cook the omlette.

Then when you're ready to add ingredients to the omlette, add the refried beans and the guacamole to the omlette and fold. Let it cook through a little more then serve up.

Don't be put off by the look of the thing, it's an ugly beast, but tastes pretty good!

Mocha Shake

Ingredients

  • 1 rounded scoop (32g), Gold Standard 100% Whey Protein Extreme Milk Chocolate
  • 15g Total. 0% Fat Free Authentic Greek Yoghurt
  • 5g Fair Trade Cocoa
  • 1.5g Truvia
  • 250ml Almond Milk - Unsweetened
  • 5g Original Coffee
  • 3-5 ice cubes

Directions

Blend all ingrediants, drink!

Oatmeal-choco & banana & strawberry shake

Ingredients

  • 15-20g Myprotein Chocolate Smooth
  • 40g, Myprotein Instant Oats
  • 0.5 Banana
  • Cinnamon (a few decent shakes)
  • 2 strawberries (optional)
  • 200ml Unsweetend Almond Milk
  • 5g, Organic Cocoa Powder (optional)
  • 10g smooth peanut butter (whole earth brand)

Directions

Put dry ingredients in blender first. Then wet (i.e. milk). Blend. Drink. Boom!

Taco Salad

Ingredients

  • 1/2 diced onion
  • 125g of extra lean mince (5% or less)
  • 1/2 taco seasoning
  • 1/2 tin of pinto beans
  • 1 tea spoon of salsa
  • 1/2 chopped up romaine lettuce

Directions

Cook onions until clear. Add mince. When mince is brown, add seasoning. Add salsa, keep on low heat. Separately, cook pinto beans for 3 minutes, then add to the mince.

Once mixed, add to lettuce, mix and eat!
