Chocolate chip cookies (plant-based!)

Dry

  • 120g (1 cup) white flour, spelt or whole-grain should also work
  • 1/2 teaspoon (TL) baking soda (Natron), can be substituted with 3/2 teaspoon (TL) baking powder (Backpulver)
  • 1/4 teaspoon (TL) salt
  • 50g (1/4 cup) white sugar
  • 50g (1/4 cup) brown sugar, can be substituted with more white sugar though this is less preferable
  • 60g (1/3 cup) dark chocolate chips, chunks, or chopped dark chocolate bar

Wet

  • 30 mL soy milk, almond/oat milk should also work, more may be needed
  • 30 mL oil that has a mild flavor (i.e. preferably not extra virgin olive oil)
  • Optional: 1/4 teaspoon (TL) vanilla extract, can be substituted with 1/4 vanilla bean

Instructions

  • Preheat oven to 160 °C (325 °F). Cover a baking tray with parchment paper (Backpapier) or grease tray with oil.
  • Mix dry ingredients together.
  • Add in wet ingredients and stir until a consistent dough is formed.
  • If mixture is consistent and is too dry for a dough to form, add a little more milk, one spoon at a time.
  • After one large ball is formed, if time permits, cool the dough in a refrigerate for around 2 hours or freezer for 30 minutes. The longer the better, though skipping this step is acceptable as well.
  • Note: Frozen cookie dough is actually preferred for baking as it keeps its shape better while in the oven, so feel free to make the dough the day before baking and freeze until the following day (or leave frozen for up to several weeks and bake as needed). If completely freezing the dough, form into balls before freezing to more easily bake later.
  • Form small balls of cookie dough, about 3-6cm in diameter depending on preference, arranging them on the baking tray with 2-3cm of space between each cookie.
  • Place the baking tray in the oven and bake for approximately 10-12 minutes, or until cookies have just started to brown on top and are still very soft. If harder cookies are desired, they can be baked for 1-2 minutes longer. Add another 1-2 minutes if the cookie dough was baked from frozen or if the cookie balls are relatively large.
  • After waiting around 1 minute, move cookies to a cooling tray if available or leave to cool on the baking tray for 2-3 more minutes.
  • Try not to eat them all yourself!
