Authentic Al Pastor, Crockpot Style

Ingredients

  • 1 pineapple

  • 1 bottle of beer

  • 1/4 cup vinegar

  • 2 pounds of pork (loin, shoulder or butt)

  • 1/2 cup onion

  • 1 pasillo chile

  • 1 guajillo chile

  • 1 teaspoon cumin

  • 1 1/2 teaspoons Mexican oregano

  • 1 tablespoon Achiote powder

  • 2 1/2 teaspoons salt

  • 1 1/2 teaspoons minced garlic

Preparation

  1. chop onion
  2. prep pineapple
    1. slice off the sides into 2-inch-wide strips, rinse and save 3 to 4
    2. cut in half
    3. core and dice one half into ½-inch pieces
    4. slice the rest into ¼-inch rounds
  3. dump shit into crockpot (everything except the half of the pineapple you cut into rounds)
  4. cover with pineapple strips
  5. cook on high for 5 hours
  6. eat it, fool! (with some cilantro and biz)

2 whole pasilla or guajillo chilies, seeds and stems removed

1 teaspoon Mexican oregano

onions and spices might be used as a substitute for chiles in this recipe

1/8 cup white vinegar (2 tablespoons)

1 pound pork roast

1/2 cup onion

3 tablespoons chili powder

1 teaspoon cumin

1/4 cup white vinegar

2 1/2 pound pork loin

1/4 cup guajillo chile powder (13 dried guajillo chiles)

1 teaspoon Mexican oregano
1 teaspoon cumin
