Carrot tasty thing
Start with:
* 1lb carrots
Shred coarsely. Avoid shredding off a bit of your thumb while you're working.
* 2T ghee (or butter or oil)
* knob of ginger, minced (or pureed)
* 2 cloves garlic, minced (or pureed)
* 1 bird chile, minced [optional]
* 1.5t garam masala
Saute your ginger & garlic [& chile] in ghee over medium heat. When they're sizzling, add the garam masala and toss around.
After a minute or so, add your shredded carrots. Sprinkle over the carrots:
* 1t salt
Stir every 3 or 4 minutes, for ~10 minutes or until the carrot has just a bit of crunch left in it. Add:
* 1/4c yogurt
* 1/4c cream
Stir together. Check for salt, then serve with rice. Sprinkle over top:
* juice of 1/2 lime
* 2T cashews, toasted & crumbled
For extra-bonus protein, add in chopped-up leftover chicken breast with the garam masala.
