Carrot tasty thing

Start with: | |
* 1lb carrots | |
Shred coarsely. Avoid shredding off a bit of your thumb while you're working. | |
* 2T ghee (or butter or oil) | |
* knob of ginger, minced (or pureed) | |
* 2 cloves garlic, minced (or pureed) | |
* 1 bird chile, minced [optional] | |
* 1.5t garam masala | |
Saute your ginger & garlic [& chile] in ghee over medium heat. When they're sizzling, add the garam masala and toss around. | |
After a minute or so, add your shredded carrots. Sprinkle over the carrots: | |
* 1t salt | |
Stir every 3 or 4 minutes, for ~10 minutes or until the carrot has just a bit of crunch left in it. Add: | |
* 1/4c yogurt | |
* 1/4c cream | |
Stir together. Check for salt, then serve with rice. Sprinkle over top: | |
* juice of 1/2 lime | |
* 2T cashews, toasted & crumbled | |
For extra-bonus protein, add in chopped-up leftover chicken breast with the garam masala. |
