Fruit Breakfast
[Serves 2 people who like large breakfasts]
Big mess of fruit, chopped. Stone fruits, apples, berries, or a mix. Something like:
3 peaches or
4 smaller apples or
2 apples and 1c blackberries or
2 apples and 2 plums
Sauté over medium in a 8-10" skillet with
2-4T butter (more is better, frankly)
1 glug maple syrup (or 1-2T sugar, vanilla sugar, etc)
Sprinkle on top:
1/2t salt
1t spice: garam masala, cinnamon, cardamom, whatever smells nice with your fruit
The fruit should release a bunch of juice. If it seems like too much (common if you add something
like frozen strawbs), let it all cook down a bit until it seems sticky gooey. It's nice to let it
form a caramelizey crust on bottom, but not required.
Mix together:
4 eggs
1/2c milk (soy/almond/etc fine, or yogurt/sourcream/ricotta, or a blend)
1/4c flour (GF works, pancake mix works)
Pour over the top of your fruit goo. Pop under a low broiler for 4-6 minutes (ymmv, broiling
is very oven-specific), until the top is lightly brown and the middle seems set. Scoop a wedge
out onto a plate and voila! Protein-rich breakfast that feels like eating dessert!
